Hackers Keyboard has that via ctrl+z, but only in horizontal mode. For this only i had my Galaxy S3 in horizontal per default. But can’t do that with modern phones’ aspect ratio and i’m missing undo since then.
To my knowledge, every single one. It’s called the Backspace Key.
I can recommend AnySoftKeyboard, it’s FOSS and very customizable. If you swipe up from the space bar, you get additional options.
I use Futo keyboard. It has dedicated undo/redo button (if you turn-on the function row)

Bloated in what way?
Over 100 MB vs. usually 20 MB.
Probably because it uses nothing online, including the voice to text. It’s only local device. A rare claim for those kinds of features.
I’m not sure, but it does have its own algorithm for swipe and things like that, with it’s own library from what I understand
